Grilled Jalapeno Chicken
1/2 cup lime juice
1 1/2 tbs minced jalapeno pepper
1 tbs vegetable oil
1 1/2 tsp garlic powder
6 skinned chicken breast halves
1/4 tsp salt
1/8 tsp pepper
vegetable cooking spray
jalapeno pepper slices (optional)
lime wedges (optional)
Combine first 4 ingredients in a large heavy duty zip top plastic bag, add chicken. Seal bag and marinate chicken in refrigerator for 1 hour, turning bag occasionally. Remove chicken from marinade, reserving marinade. Sprinkle chicken with salt and pepper. Coat grill rack with cooking spray, place rack on grill over medium-hot coals (350-400). Place chicken on rack and grill, covered for 8 minutes on each side or until chicken is done, basting occasionally with marinade. Transfer chicken to a large serving platter. If desired, garnish chicken with jalapeno pepper slices and lime wedges. Serves 6. |
