Scalloped Oysters
4 1/2 cups crushed saltine crackers
1/2 cup butter or margarine, melted
2 containers(12 oz)fresh standard oysters, undrained
1/8 tsp salt
1/8 tsp pepper
1 tbs chopped fresh parsley
1 1/4 cups half and half
paprika
Brown cracker crumbs in butter, and set aside. Drain oysters, reserving 1/2 cup liquid. Place half of crumbs in a lightly greased 12 x 8 x 2" baking dish, add oysters, salt, pepper, and parsley. Cover with remaining crackers crumbs. Combine half and half and reserved oyster liquid, pour over cracker crumbs. Sprinkle with paprika. Bake at 350 for 35-40 minutes. Serves 8-10. |
