Spicy Peach Shortcakes
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp ground nutmeg
3 tbs sugar
1/4 cup shortening
1/3 cup milk
1 tbs butter or margarine, melted
1 tbs sugar
1/4 tsp ground cinnamon
peach filling
whipped cream topping
Combine first 5 ingredients in a medium bowl, cut in shortening with a pastry blender until mixture resembles coarse meal. Add milk, stir until dry ingredients are moistened. Turn dough out onto a floured surface, and divide into 4 portions. Shape each portion into a 3" round shortcake, and place on a greased baking sheet. Brush tops of shortcakes with butter. Combine 1 tbs sugar and cinnamon, stir well. Sprinkle sugar mixture over tops of shortcakes. Bake at 425 for 15 minutes or until golden brown. Split shortcakes horizontally, and place bottom halves, cut side up, on serving plates. Spoon about 1/4 cup peach filling over each 1/2 , place top 1/2 of shortcake over filling, cut side down. Spoon about 1/4 cup filling over top 1/2 of shortcake. Top with a dollop of whipped cream topping. Serve warm. Serves 4. |
