Cranberry Leg Of Lamb
1 (3-5 pound) half leg of lamb
1 clove garlic, sliced
1 tsp ground ginger
1 tsp dry mustard
1/2 cup whole berry cranberry sauce
1/4 cup cherry preserves
1 tbs port wine
2 tbs all purpose flour
1/4 cup water
1/4 tsp salt
1/8 tsp pepper
Place lamb, fat side up, on a rack in a shallow roasting pan. Make several slits on outside of lamb and insert garlic slices. Combine ginger and mustard in a small bowl, and rub on outside of lamb. Insert meat thermometer , making sure it does not touch fat or bone. Bake at 325 for 1 hour. Combine cranberry sauce and preserves in a small saucepan, mixing well. Cook over low heat until melted, stir in wine. Spoon over lamb and bake for 1 hour 15 minutes or until meat thermometer registers 160. Remove lamb to a serving platter, reserving drippings in pan, and let stand 10 minutes before craving. Skim fat from pan drippings, measure remaining liquid, adding enough water to measure 1 1/4 cups and pour into saucepan. Combine flour and 1/4 cup water, stirring well and add to pan drippings. Cook over medium heat, stirring constantly, until gravy is thickened and bubbly. Stir in salt and pepper. Serve gravy with lamb. Serves 4-6. |
